Sullivans Cove TD0348 14 Year Old Single Cask 2008
American oak second fill Single Cask TD0348 was distilled in December of 2008, and decanted in November of 2023, maturing at 14 years and 10 months, in a single 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.

   Nose:   Hello tropicals! Straight out of the glass we have golden kiwi, mango nectar, lychee and dragon fruit. Being just under 15 years old, one would think the oak profile to be the leading role here, however quite to the contrary the second-fill cask maturation has left plenty of space for distillery character to shine. The oak rests below the fruit, is light and wafery, adding delicate structure and touches of coconut that wonderfully complement the tropical fruits. There are bright and slightly herbal notes of lemon-lime bitters and lemon curd in the top notes, with a touch of savoury depth that adds dimension to the profile (think, Bonito flakes and soy).
   Taste:   The tropical fruits from the nose are right there upon entry to the palate, led again by golden kiwi, and introducing guava and passionfruit. There is a green fresh side to the palate that mingles with the tropical fruits really well (aloe vera, cucumber sandwiches and daisy), and creates an overall zingy and fresh summer feel. The body is fully developed and the texture is silky and rich. The oak remains light (vanilla wafer, tissue paper, old books, tobacco) yet ever present and provides delicate structure throughout. An overall sophisticated, very tropical fruit-driven and delicious palate.
   Finish:   A beautiful, long finish. As the tropical-fruit train continues along the track, notes of aniseed and fennel appear (classic distillery character notes) and are met for a moment by a complimentary mineral note of freshwater river rocks. The fruits take on a sherbet angle, a pithy character, and warm swells of musky rose and dried petals see the finish to a close.
